Fresh Fruit Salad Zested up with Lime

Adding a fresh component to your Fourth of July Celebration would be a great addition! Since Fourth of July meals tend to be meaty and quite filling, adding something light and fruity to your table, your guests would feel refreshed and not so heavy feeling.

This Fresh Fruit Salad has in season fruit and is tossed in a light citrus syrup mixture with a touch of mint.

1/2 a cantaloupe (cut into bite sized pieces)

1 pound strawberries (halved)

1 pineapple (cut into bite sized pieces)

1/2 a small watermelon (cut into bite sized pieces)

1/4 cup of mint (finely chopped)

Citrus Syrup Mixture:

2 limes (zested and juiced)

2 Tablespoons of honey (more if preferred)

Toss and combine fruit in a large bowl. Set aside.

In a small bowl, whisk together mint, honey, lime juice and zest.

Pour citrus mixture over the fruit and toss all ingredients together. Serve with a large spoon and enjoy!

Note: This salad can sit up to 20 minutes dressed. Make sure you toss the salad again right before serving to redistribute the syrup up from the bottom.
